Ippudo Ramen has one of the best tonkotsu ramen – The Shiromaru Classic [760¥] us Ippudo’s original tonkotsu ramen since their inception. The rich and fragrant broth is cooked for over 18 hours and then left to ‘mature’ for 24 hours to extract the pleasant, savory taste of pork. Served with homemade Hakata-style thin and straight noodles which matches well with the broth.
The Hakata bite-sized dumplings [220¥ for 5 piece] are a must order to go with your ramen. They are crispy on the outside and juicy on the inside. Best of all, I love my gyoza skin thin.
Of all the famous ramen chain (e.g Ichiran, Afuri,Marutama), I love Ippudo’s soup base the most. They are conveniently located in Ginza (near Mitsukoshi Ginza) on a small alley opposite Millenia Mitsui Garden Hotel. Great place for supper!!
